Farmer’s Story:
“Taru Farmers Communities are rediscovering the age-old tradition of growing Emmer Wheat, a forgotten but highly nutritious variety. Guiding them on this journey is Suresh Desai, a passionate advocate for sustainable farming and a proud descendant of a family with four generations of Ayurvedic doctors.
Inspired by the wisdom of his ancestors, Suresh Desai founded ‘Sun Farming,’ a method that harmonizes agriculture with the five elements of nature. His innovative approach has earned him national recognition and has transformed the lives of over 5000 farmers.
Emmer Wheat, known for its rich dietary fiber and low gluten levels, is making a comeback thanks to these dedicated farmers. By cultivating this indigenous crop, they are not only preserving a vital part of India’s agricultural heritage but also ensuring a healthier diet for themselves and their families.”
How to Cook:
Recipe for Indian Chapati Flatbread:
1. Measure 1 cup of Emmer wheat flour and place it in a bowl.
Gradually add water and knead the mixture into a dough. The dough should be medium consistency—not too dry or too wet.
2. Take a portion of the dough and roll it into a ball.
3. Flatten the ball into a circle on a flat surface, using a bit of dry flour to prevent sticking. Continue to flatten it further with a rolling pin until it’s round and even.
4. Heat a flat iron griddle (tawa) and place the chapati on it.
5. Cook one side until it starts to bubble, then flip it.
6. When it’s half-cooked, use tongs to hold the chapati over an open flame, flipping it to cook both sides evenly until it puffs up and is fully done.
7. Serve the hot, fluffy chapatis with dal and vegetables.
