1. Black Rice Dosa

How to Prepare Batter

Soak the black rice with little water for an hour and grind into a smooth paste. Add water to get the desired consistency. Or Add water to rice flour. This is instant batter.

Ingredients:

  • Black rice – 1 cup
  • Urad Dal – half cup
  • Cashew nuts – 5-10 (optional)
  • Salt to taste
  • Fenugreek Seeds – 1/4 teaspoon and or flax seeds ¼ tsp
  • Oil for cooking Dosa – 1 teaspoon

Method : Wash and soak Rice, Fenugreek seeds, Urad dal for 2-3 hrs. Grind it with required water to smooth batter. Add Salt and mix well. Let it ferment, for 5 hours or overnight. Add salt to taste and make dosa or pancakes.

Optional : Soak cashew nuts for an hour. Grind and add to batter. Optional: Add 1 tbs soaked rice poha / flakes and 1tbs crushed and ground boiled black rice mix into the batter just before cooking.
